CHICKEN PESTO PIZZA WITH CAULIFLOWER CRUST

Today, I'm sharing my latest keto recipe that you will surely love...

FOR CAULIFLOWER CRUST                                                                           TOPPINGS

ONE HEAD OF CAULIFLOWER                                                                        ¼ CUP OF PESTO                                              

ONE EGG                                                                                                             ½ CUP CHICKEN (LEFT OVER)

1/4 CUP MOZZARELLA                                                                                    ½ CUP PEPPERONI

1/4 CUP PARMESAN CHEESE                                                                         ARUGULA LEAVES

SALT, PEPPER, OREGANO, BASIL                                                                   SLICED ONION

CRUSHED RED PEPPER FLAKES (OPTIONAL)                                              2 TOMATOES SLICED

                                                                                                                                ½ CUP MOZZARELLA

DIRECTIONS

  1. PLACE THE CAULIFLOWER TO FOOD PROCESSOR AND PULSE IT UNTIL IT BECOMES LIKE TINY CRUMBS
  2. DRY IT BY PLACING IT IN THE OVEN BY 10 MIN OR MICROWAVE IT FOR 5MIN. BE CAREFUL NOT TO BE BURNED.
  3. COOL IT DOWN.
  4. COMBINE EGG, MOZZARELA AND PARMESAN, SALT, PEPPER AND OREGANO AND FORM A CRUST.
  5. BAKE IT FOR 10 MIN UNTIL BROWN.
  6. PLACE THE PESTO OVER THE CRUST, CHICKEN, PEPPERONI, ONION, TOMATOES, ARUGULA AND SPRINKLE THE MOZZARELLA
  7. BAKE IT FOR 10-15MIN.
  8. HAVE SALAD ON THE SIDE
